This herbal liqueur starts with a brandy base distilled from old-vine Albariño pomace, meaning –like Italy's grappa—it's made with the solids left after pressing grapes for wine. It's then aromatized with anise, saffron, chamomile and rosemary. The end result is a pale straw hue and mild, slightly pungent aroma that hints at anise and banana.
