For the Winemaker's Select, a small block of Ciel du Cheval Vineyard Roussanne was cropped down to two tons per acre and fermented and aged entirely in stainless steel. The results are impressive—a sensationally lively, leesy, creamy wine, with flavors of lime, melon and a hint of honey. It offers superb minerality, length and compression.
