The Fess Parker team now serves this and other bubblies at their sparkling-dedicated Bubble Shack in Los Olivos. An all-Chardonnay bottling, Asian pear, lemon pith and wet clay are its primary aromas. The palate is all about minerality, its lime and tangerine flavors tinged with chalk, and crushed gravel.
