This Shiraz shows the warmth of the vintage via plush plum and black-cherry notes, but also the overall coolness of this mountainous central Victorian region via black pepper, graphite and a lick of vanilla and baking spice. There's richness on the palate but a line of freshening acidity, a chalky tannic backbone and supportive oak. Hence the name, it's a wine for roast meat if there ever was one. Christina Pickard
