GC 2021 Stavig Vineyard Melon de Bourgogne (Willamette Valley)

Fermented in a combination of concrete eggs and acacia wood, this flinty, medium-bodied wine immediately wins you over with its aromas of wet slate, jackfruit, coconut water and saline. There's a little tart green-apple fruit on the palate, but it's mostly about the lemon, lime and fresh-cut grass—brisk acidity. Michael Alberty
