This estate-grown Cabernet is blended with 6% Cabernet Franc. At first the plush fruit flavors of black cherry and cassis pop into focus; then with additional airing the wine gains depth and texture. The finish is rounded with notes of cacao, espresso and graphite, suggesting that further aging—up to a decade—is an option. But it's awfully good right now. Paul Gregutt
