Time in bottle has done nice things for this white, a blend of 85% Sauvignon Blanc (half of it fermented in oak) and 15% Sémillon. Caramel and vanilla dominate on the nose, with the palate crisp in fresh-squeezed lemon and tart apple, especially on the finish. The oak influence shows in positive ways, adding depth and creaminess to the texture.
