What a roller-coaster! This spice--infused, young high-rye whiskey seems to evolve with every second it's in the glass. The complex fragrance is cinnamon-spice, herbal and fruity, all at once. On the tongue, it tastes herbal, even slightly bitter. It shifts from bitter orange to citrusy, to sarsaparilla and cinnamon, and back to bitter again. Medium to light weight, it also has a modest alcohol bite. Straight up, it's not unlike taking a slug from a bottle of bitters, but this intriguing little wonder has interesting implications for mixed drinks. Kara Newman
