J. Bouchon 2020 Salvaje Blanco Secano Interior País (Maule Valley)

This colorless País comes from wild plants that grow like trees and are harvested using ladders. The wine is fermented in amphora, using only natural yeasts. The result is a briny-smelling, saline-driven white with stone-fruit acidity and salty flavors suggesting barely ripe nectarine. Mild oxidation is already apparent on the finish. Drink now.
