Jean-Claude Buecher 2009 Insomnia Extra Brut Sparkling (Crémant d'Alsace)

Beeswax, shortbread and lemon vie for predominance on the fragrant nose of this wine. The palate expands the beeswax notions and adds dried citrus peel and pith, giving a concentrated core with beguiling autolytic depth. A seaweed umami richness and saltiness comes across like a fusion of miso and buttery shortbread. The foam is fine, with tiny bubbles that glide with creaminess.
