It's great to find a Chablis with some maturity. It takes away the characteristic minerality a little, but it does add great citrus and honey flavors. Chablis often represents better value for money than basic Bourgogne Blanc, and in the hands of a quality negociant like Joseph Drouhin, this is a delicious wine that will go well with many fish dishes.
