Co-fermented with 3% Viognier, this has a nice peppery lift. The fruit flavors seem less forward, with the herbal components much more front and center. It's made from a clone specific to the Cougar Hill Vineyard, showing cool climate flavors with subtle grace. Given a full 24 hours of breathing time, it opens further into a dazzling, rich mix of cherry and cassis that's soaked in an herbal broth.
