Kay Brothers's top wine, made from over 120-year-old vines on this historic estate, is a dense thicket of ripe bramble berries still on the bush. There's also a strong exotic savory element: soy sauce, raw beef and Chinese 5 spice. Earthy eastern spices carry through to the palate which is supported by chewy, tight-grained tannins. Everything is in place for this to age with grace for many years to come. Drink now with a rare salt-encrusted steak or cellar for the next 20 years. Christina Pickard
