Made in minuscule quantities from sommelier Nicolle Borrero at Wild Arc Farm in NY's Hudson Valley, this sunset-hued wine is a blend of hybrid and Vinifera varieties (Riesling, Aromella and NY81). It opens with a heady nose you could dive into that seems to change with each sniff (first apricot blossoms and orange peel, then green tea and marzipan, then wildflower honey). The palate further engulfs the senses, the skinsy tannins gripping gently at the end. A minimally made wine that never feels funky or overly-extracted. Pair with an aged, tartrate crystal-laced cheese like Parmigiana or enjoy on its own. Christina Pickard
