Layer Cake 2015 Shiraz (South Australia)

As the name suggests, this wine is crafted almost like a dessert, with a heady nose of baked blackberries, chocolate and cherry cordial. It's not all about post-meal confections, however. Dried thyme, ground black-pepper and graphite notes add much needed dimension and earthy tones. The palate falls apart somewhat with the presence of bitter oak amidst a thick duvet-like texture awash with ripe dark fruit. Christina Pickard
