Mayer 2018 Cabernet (Yarra Valley)

It's ultra rare to see 100% whole bunch in Cabernet, but if anyone can pull it off, enigmatic, artisanal producer Timo Mayer can. By deriving tannin structure from the fruit and not from heavy oak, it allows for a vibrancy and approachability in youth uncommon to this variety. A high-toned nose of tangy red berries, heady florals and cocktail bitters makes you want to dive right in. The palate is fresh and fleshy with a stalky spine and textured, powerful tannins. Hands off yet clean with complexity and sex appeal, there is simply nothing else like it. Christina Pickard
