This is a beautifully complex and layered selection, with prominent pure-fruit aromas and flavors that are perfectly partnered with sour wild-yeast and barrel notes. It pours a rich mahogany color, with fairly aggressive carbonation that produces a decent off-white head. Immediate fruit aromas lead the bouquet, supported by a tart, almost vinous backbone and accents of cocoa and earth. The palate offers more of the same, but with the acidic vibrancy and tart rhubarb flavor playing key roles in taming the sweet strawberry sensations. The texture is smooth, and the long, evolving finish transitions from ripe fruit flavors to tart berry and finally earthy accents of pastry, cocoa bean and bark.
