Novy is a project of the owners of Siduri, and this is surely one of the most original and striking wines made anywhere in the country. Oregon Pinot Noir is immediately pressed, then fermented in a mix of stainless steel and neutral oak. The result is a sharp, peppery white wine, with Pinot Noir aromas and Roussanne-like concentration.
