This estate-grown, traditional-method sparkler changes its blend each year. The current 2018 vintage leans heavily (82%) on Pinot Noir; the rest is Chardonnay. Tiny, explosive bubbles signify good things to come. It's bone dry as the designation suggests, though in the confusing world of vino, extra brut can sometimes be sweeter than brut. Mineral soaked, immaculate and refreshing, this sophisticated fizz will perfectly accompany all the classic sides, from oysters to smoked salmon to fois gras. Paul Gregutt
