Passing Time 2017 Cabernet Sauvignon (Walla Walla Valley (WA))

Cellar Selection

This wine is 100% varietal, with two-thirds of the fruit coming from Seven Hills Vineyard and one-third from Pepper Bridge. The aromas enchant, with notes of dried herb, black currant, red apple, cocoa and spice. Broad, palate-coating fruit flavors follow, showing depth, texture and dimension. A firm coil of tightly wound tannins ties it together. It's a very classy, sophisticated wine that needs time in the cellar to show its stuff. It only picks up steam the longer it's open. Best after 2027 and will shine a good decade-plus beyond that. Sean P. Sullivan
