Penfolds 2015 Bin 707 Cabernet Sauvignon (Australia)

Unfortunately, the first bottle of this was corked, which seems a shame considering the steep price, which has skyrocketed in recent years. The second bottle, however, showed off richness and complexity, with notes of raspberry, cherry, beets, coffee grounds, dark chocolate and a savory earthy Middle Eastern spice element. Chalky in texture with tight dusty tannins and drying herbal woody characters, this Cab is still in its infancy. Leave it be for a few years, however, and it should blossom beautifully.
