Penley Estate 2019 Tolmer Cabernet Sauvignon (Coonawarra)

While currently quite austere and tightly wound, Tolmer also shows what feels like a little volatile acidity. In this case it adds, rather than detracts, by adding lift and complexity to the broody aromas of cassis, black cherry, mint and spice. The palate is framed by drying, dusty tannins that cinch the plump fruit and earthy spice. Give this time or a decanter and plenty of protein. Drink now–2029. Christina Pickard
