The nose on this Tuscan Merlot is all umami at first. Mushrooms, seaweed and moss roll into olives and balsamic vinegar, before a bit of wild cherry and fresh plum skin. Cherries, strawberries and chocolate arrive on the palate even with the savory notes still present, held together with substantial tannins and decisive acid. Danielle Callegari
