A gentle sparkling-wine pressing method was used to, as the winery said, “extract juice from the heart of the Pinot Noir berry” before barrel fermentation. I love the wine so much, I will go along with this. It has bright acidity and a weighty texture, with aromas and flavors of pineapple, toasted filberts, butter, lemon tarts, saline and cocoa butter.
