Winemaker Steve Gerbac's first crack at this hallowed vineyard that surrounds an unfinished monastery is a winner on all fronts. Quite light in the glass, it offers lime salt, grapefruit blossoms, riper yellow apple, a touch of spun sugar and a strong sense of salted butter on the nose. The palate shows Meyer lemon pith, nectarine flesh, chalky texture and an extreme salinity that makes the mouth water. Matt Kettmann
