The original idea for this beer came when the brewery helped celebrate the 20th anniversary of the famed San Francisco beer bar, Toronado. It has evolved over the years to become a blend of wild ales aged in Cabernet Sauvignon barrels, now with the addition of currants. It's that complex fruit, a mixture of rounded acidic and tart sweetness, that comes across first on the palate. From there, it evolves into a lovely bouquet of pepper spice, old leather and pipe tobacco, and finishes with a slight savory character. It is barrel aged for up to eight months, and can be consumed fresh, but is also built to age. John Holl
