Resembling cloudy apple juice in appearance, this skin-contact white shows none of the canned vegetable characters often found in Margaret River Sauvignon Blanc. Instead, the nose weaves an intricate web of wet hay, beeswax, flowers, grapefruit pith, nuts and wet stones. The palate is beautifully waxy in texture and not as viscous as one might suspect, lifted by crystalline acidity. Christina Pickard
