Here it's cofermented Pinot Blanc (60%) and Pinot Gris (40%), resulting in a richly fruity wine with an appealing mix of apple, melon and pear. The spot-on ripeness keeps the acidity in check—just enough to brighten up the fruit and cleanse the palate, but not tilting over into sourness. A hint of toast from aging in neutral wood finishes the flavors. Paul Gregutt
