This Long Island winery is dedicated solely to the production of traditional-method sparkling wine, with a French winemaker and plantings of Champagne's three traditional varieties. This Chardonnay-based bubbly opens gently, with aromas of yeasty apple, honeyed pear and white-flower blossoms. Dry overall, with a whisper of sweetness, the bright bubbles and tangy acidity buoy a creamy texture and toast-and-honey orchard-fruit flavors.
