Summers 2007 Cabernet Sauvignon (Diamond Mountain District)

This is a beautiful, classic 100% varietal Cabernet Sauvignon, but it's also immature in hard tannins, which is a telltale mark of this mountain appellation. The wine is bone dry and complex, with waves of blackberries, black currants, cassis, minerals and cedar. It clearly wants time in the cellar. Best after 2013.
