Tatachilla 2006 Cabernet Sauvignon-Shiraz (McLaren Vale)

This blend of 59% Cabernet and 41% Shiraz starts off a littel unsteady, offering up slightly vegetal, cabbage-like aromas and sour plum fruit, but with a little breathing time, the off aromas give way to plums and blueberries, tart acids and black olives. It's a bit tannic and astrignent right now, so try it in 2010 for best results. Joe Czerwinski
