Savory notes of balsamic vinegar and soy sauce are up front on the nose of this Sangiovese, with quieter flavors of sour plums, sour cherry, wild fennel and black licorice. The palate holds onto the umami vinegar notes but adds bright Bing cherry and coffee-chocolate on the back. Tannins are softening but acid continues to draw a tight line around the tongue through the finish. Danielle Callegari
