The Winery At Holy Cross Abbey 2016 Cabernet Sauvignon (Colorado)

The nose starts with earthy notes of underripe berries, green tobacco leaf and tilled earth, blended with anise seed and cinnamon stick. With time in the glass, ripe berry aromas emerge to balance the earthiness. Fine-grained tannins lend plenty of structure, propping up flavors of cranberry and raspberry and backed by tons of savory black pepper, clove and sawdust. Well balanced acidity keeps it all together through to the spicy finish that's loaded with cracked pepper and blackberry flavors. Fiona Adams
