A bubbly disposition

This born-and-bred New Yorker has taken on the mantle as “Champion of Champagne.” Her impressive résumé includes stints at Chicago cocktail mecca The Office at The Aviary, as well as Pops for Champagne. In New York City, she’s worked at Artisanal and served as wine director at Birds & Bubbles. More recently, Arce worked with bar impresario Ravi DeRossi to create the Champagne bar Riddling Widow. In July, it transformed into Air’s Champagne Parlor, with Arce now in an ownership role.
