In his youth, Poldoian says, wine was always on the family table. A love of food and drink followed him to Tufts University, where he wrote a restaurant column for the school paper and started a cooking blog. After graduation, Poldoian fell in love with Camerata as a customer. He was drawn toward its emphasis on exploration, nurtured by a friendship with the previous general manager, David Keck, MS. Since he took over the reins, Poldoian has shifted the wine list toward the New World.
