Better known as Mr Lyan, career bartender and bar owner Chetiyawardana has long been considered a tastemaker. When his former London outpost, White Lyan, became the world’s first cocktail bar to minimize use of perishable ingredients like fruit and ice, it influenced other establishments around the world. Beyond his international spots, Super Lyan in Amsterdam and Lyaness and Cub in London, Chetiyawardana’s first stateside outpost, Silver Lyan, is anticipated to also push boundaries. “I’ve always been keen to try and see what we can challenge about the established ‘rules’ of the food-and-drink world,” he says. The drinks world is undoubtedly better for it.
