Salcito cultivated the beverage programs for the Momofuku family of restaurants (among them, Ko and Má PĂŞche have earned spots on Wine Enthusiast’s America’s 100 Best Wine Restaurants lists). But her love of wine can’t be contained to a dining room. Salcito founded Bellus in 2011, working with partner wineries in Sicily, Campania, Tuscany and California to create wines from organically farmed grapes. Salcito’s take on an edgy wine cooler, Ramona Fizz, has recently been released. “It’s a sassy younger sister to Bellus, made from organic grapes and fresh grapefruit,” says Salcito. “The inspiration was a combination of nostalgia for the wine cooler and a current obsession with spritzes.”
