Naba’s creative, low-alcohol cocktails and Old World-leaning wine lists launched his career as one of California’s most sought-after beverage consultants. This year, he founded Waxwing Restaurant Consulting after dreaming up intriguing drinks as director of operations at Nico, a Michelin-starred bistro. While surfing in Northern California, Naba scours the coastline for unique ingredients such as Monterey cypress and wild fennel to incorporate into drinks. He’s also planning a wine release.
