New blood courses through Coi, with Matthew Kirkely and Courtney Olson coming on last year as chef and wine director, respectively. The tasting menu highlights inspired seafood dishes, paired with a list of 500-plus wines primarily from France’s classic regions.
From the sommelier: “One exciting trend is people are drinking more Champagne. For a restaurant like ours with a multicourse tasting menu, there are few better wines that pair so harmoniously than Champagne. We’re also seeing a trend towards rosé wine.
