Swiss cider, Texas “Sherry” and other fun oddities make Matthew Pridgen’s beverage menu pop at Underbelly’s new sister restaurant. The hotspot is a five-year-long project that transforms into a new restaurant concept each September.
From the sommelier:“Whereas most restaurants have long-term goals of building their wine list for the long term, we’re already shifting our wine focus to the next restaurant concept, Romance Languages, opening [in September]. I love the food and wine scene in Houston right now. We have access to more wine than ever before, and an excellent group of somms, both young and old, that are taking advantage of this and putting together some great programs.
