Chef Ryan Poli and his brother, Matthew, the beverage director, launched a Tuesday Test Kitchen initiative at their highbrow, 22-seat eatery. Guests have the opportunity to sound off on future menu hits.
From the sommelier: “I’m really enjoying wines from South Africa right now. It’s so much more than just Pinotage. We’re pouring this white from Cederberg on the tasting menu right now. The grape is Bukettraube, a totally obscure varietal that everyone is usually baffled by but all enjoy it, especially in the context with food.” –Matt Poli
