With one of Philadelphia’s largest wine lists, a.kitchen+bar opened a bottle shop during the pandemic, a.bar+bottles. It became a favorite for its adventurous and well-priced wine selection.
Meanwhile, Ellen Yin, cofounder and co-owner of the restaurant’s parent, High Street Hospitality Group, worked as a member of Philadelphia’s Restaurant Advisory Committee to lobby for long-term support of outdoor dining, alcohol to-go and more equitable landlord agreements.
“The term ‘pivot’ seems entirely worn out, yet no other word articulately captures the constant flexibility that has been required to survive as a restaurant amid the pandemic,” says Yin.
Executive Chef Eli Collins adds, “Our goal throughout the pandemic has not only been to survive as a business but to be there for people as a place of warmth and comfort. As a chef, that is the best possible mission to be on.”
