“For perhaps the first time in history, New Orleanians dined outside during August,” says Chef and Owner Nina Compton.
While she had reservations about outdoor dining, Compton says she was dedicated to continuing to support staff, farmers and fisherman. That meant getting creative with dining options. In addition to outdoor tables in summer, she did themed drive-throughs. One particular challenge? Providing wine service to guests eager to purchase nice bottles.
“The romance of presenting a physical wine list is gone for now, with QR codes and online menus, but it has reinforced the role that our wine directors have played while interacting with the guests,” says Compton.
