Niche Niche’s unique concept is a fixed-price dinner party every night of the week, with a one-night-only residency by a different wine professional from other restaurants or elsewhere in the industry.
During the pandemic, Owner Ariel Arce extended the concept to bring in guest chefs whose own restaurants were closed, so they could work on their menus while reconnecting with the community—and getting paid.
“I’ve learned that the people who you work with are the most important part of your job,” says Arce. “When all that your restaurant is reduced to is what you want to do—not if it’s going to work, not if it’s going to make money, not if you have to pack a dining room with people—then creating that reality with good people and friends is of the utmost importance.”
