“I truly believe that we’ve been given a gift to have lived through this pandemic,” says Gavin Kaysen, chef and owner of Spoon and Stable, the flagship restaurant of his SoignĂ© Hospitality Group. “We have an opportunity to not only make changes, but to write the script of how we would like the future of hospitality and cooking to look.”
Despite—or perhaps because of— the pandemic-related closure of his French restaurant Bellecour, Kaysen found ways to help employees, customers and colleagues throughout the pandemic. He cofounded the Heart of the House Foundation to support current and former employees, hosted GK At Home, an interactive virtual cooking-class series, and worked with local and national government as an active member of the Independent Restaurant Coalition.
