“American comfort food by immigrants” is the welcome tagline at The Usual. Also comforting is the ample—and built to be paired—international wine list, which has sections for “fried chicken wine” and “burger wine” and caricatures of favorite winemakers.

As the trend of ‘Rosé All Day’ has started to slow down, the consumption of chilled red wine and in such high quantities is incredible to see. My philosophy for wine is balance, as I think most beverage directors can relate. I’m starting to see more and more Sommeliers embracing everything. No longer is there a divide in the industry as to what should be put on the list, or at least what I’m seeing here in New York City. Lists with a mix of everything.
