
Some people think that mulling a great bottle of wine is an affront, but this delicious drink has almost as much history as wine itself and screams “winter.” You don’t have to stick to cheap swill dressed up with stale, premixed mulling spices.
A quality mulled wine can fit any fête, and it doesn’t have to be red. Try mulled white, rosé or even Port. Here are some tips and recipes for the best mulled wine in every hue.
General Mulled Wine Tips
As with cooking wine, the base for a good mulled wine should be drinkable on its own. But it shouldn’t be overly expensive or complex, as such complexities can be lost and/or exaggerated in a negative way.
For flavoring, use whole spices that haven’t been in your cupboard too long. Citrus should be scrubbed well to remove any waxy coating. Clove is a classic flavor of mulled wine, though allspice berries give clove-like aroma and flavor with a bit more complexity. Note that whole allspice and whole cloves can be used interchangeably in these recipes. Star anise is also wonderful, with its festive star shape and warm flavor. And it’s not holiday fare without a fresh grating of nutmeg.

Brandy serves double duty here, as it adds punch and cuts sweetness in mulled wine. As with sugar, feel free to adjust quantities to taste.
Our mulled wine technique infuses spice into a small amount of wine (the alcohol in wine helps extract flavors) followed by the addition of rest of the wine and brandy to minimize the amount of alcohol that evaporates. Once the alcohol is added, use a candy thermometer to ensure the temperature remains below 170°F. Alcohol in wine has a boiling point of 173°F, so keeping it below 170°F will minimize loss as well as evaporation as it sits on the stovetop.
Mulled wine can be served immediately, or it can be kept covered on the stovetop at this temperature for at least a few hours. Any evaporation of liquid or alcohol will be minimal.
