Wine list: The wine list features nearly 200 selections, each with a footnote, and a few with longer descriptions. “Hopefully all the wines tickle the mind a little and have good stories,” says Grubbs. “I tend to like wines with a raison d’etre.”

Perfect pair: Roasted pheasant and hen of the woods mushrooms with Tikves’ Bela Voda (a red blend of Vranec and Plavek) from Macedonia.

Riot worthy: ‘It is, and probably forever will be, the somewhat wine-unfriendly frogmore stew.’

Wine events: 5 & 10 hosts a number of winemaker dinners throughout the year. Custom wine tasting menus are also available to customers. “I pair wines and get to yammer on about them,” says Grubbs.

Wine list: The wine list at A16 encompasses 500-plus selections, predominately from small producers that are carefully curated to present the best quality and innate value provided by the bounty of Southern Italy. We place a large emphasis on wines made using organic or biodynamic farming methods.

Perfect pair: A16 works with local farmers to highlight seasonal offerings. The tuna conserva with dried fava beans is delicately garnished with fava leaves, and, when paired with Clelia Romano’s Fiano di Avellino, is an ideal homage to Southern Italy using local ingredients.

Anasazi Restaurant at Rosewood Inn of the Anasazi

    Url: rosewoodhotels.com

    Phone: 505.988.3030

The food at the Anasazi Restaurant focuses on fresh, seasonal ingredients and the abundance of local produce. The restaurant’s menus change frequently and celebrate American cuisine, featuring rustic, yet sophisticated Southwestern flavors with fresh seasonal and regional ingredients. I often select a wine for our diners first and then have them look at the menu and choose their dinner, based on my recommendations. Signature dishes include duck enchilada molé, diver scallops and kurobuta pork belly, achiote grilled salmon, grilled elk tenderloin and Angus beef duet with diablo sauce.

Wine list: With over 300 bottles, our wine list features a diverse and inviting selection of both Old and New World wines that enhance our menu.

Perfect pair: Rocky Mountain grilled elk shortloin with baby root vegetables, goat cheese dumplings and caramelized onion jus with Merryvale’s 2008 Profile.

Riot worthy: ‘Two of our current menu’s standouts are Rocky Mountain grilled elk shortloin with baby root vegetables, goat cheese dumplings and caramelized onion jus, and free-range Northern New Mexico lamb roast with jalapeño-croquettes and vegetable ragout.’

Wine events: We hold intimate, private wine dinners for no more than 12 guests in our award-winning Anasazi wine cellar. Seated at a massive wood table, in a candlelit setting amongst the many bottles of fine wine on reserve in the cellar, guests enjoy a spectacular Southwestern menu paired with exquisite wines.

    animal

    Url: animalrestaurant.com

    Phone: 323.782.9225

Animal offers seasonally inspired, meat-centric cuisine with influences from many cultures, but ultimately pivots around what’s in season at the farmer’s market.

Wine list: The one-page wine list showcases some 20 wines by the glass with a focus on Old-World wines from France, Italy, Alsace, Germany and a small amount from Spain. “Many are small production grower-producers,” says Beverage Director Helen Johannesen. “Some are biodynamic, but all are naturally driven.”

Perfect pair: “The flavors at Animal are so diverse that it takes well-made and elegant wine to pair perfectly with our food,” says Johannesen. “A Ligurian Pigato pairs beautifully with the hamachi tostada, whereas a dish like the pig ear, chili lime, fried egg is best consumed with beer. Food-and-wine pairing at Animal is adventurous and guided by the likes of the diner and the seasonality of the food.”

Riot worthy: ‘The Hamachi tostada, pork belly sandwiches and chicken liver toast are all standout dishes. ‘It was the foie gras biscuit with maple sausage gravy,” notes Johannesen, “however, since foie gras has been banned, people have already rioted once.”

Wine events: We currently only offer wine seminars to our staff members, but perhaps that could change in the future. If a guest would like to explore food-and-wine pairing at Animal, we will take them on a wonderful trip, pairing different wines, beers- and vermouth-based cocktails with each of their courses.

    Blackbird

    Url: blackbirdrestaurant.com

    Phone: 312.715.0708

At Blackbird, Executive Chef Paul Kahan has created a unique farm to table menu. This is optimized by his long-standing relationships with many local farmers, with a contemporary American format allows the seasons to have a strong impact.

Wine list: The wine program is focused on reflecting the food. Looking for wine that fits the weight of the food. Trying to keep wine by the glass examples that may be seasonal by flavor and texture, thus pairing fluidly, yet still looking for small artistic producers.

Perfect pair: The wood-grilled sturgeon pairs beautifully with a white Burgundy. The dish features a “meaty” fish that picks up a smoky flavor from the grill, which works well with the full-bodied texture of the wine.

Riot worthy: ‘While being a seasonal restaurant there has always been the endive salad on the menu. This is endive, greens, frisée, fingerlings, pancetta in a crispy potato basket, with a poached egg.’

Wine events: We do wine focused-paired tastings in Blackbird’s private dining room.

Perfect pair: The biocharred cabbage with house-made speck and quince paired with Kärthauserhof’s 2002 Eitelsbacher Kärthauserhofberg Riesling Spatlese from the Mosel is a perfect pairing for spring. The saltiness of the speck, the smoky flavor of the cabbage and the sweetness of the quince are a magical combination with the Riesling.

Chef Tory McPhail’s cuisine can be described as modern New Orleans cooking meets haute Creole cuisine. In our daily collaborations between food and beverage, Chef McPhail will often tweak or     change a dish so that a perfect wine pairing can be achieved.

Wine list: Innovation, excitement and accessibility are at the root of Commander’s wine program. We focus on presenting mature wines at affordable prices, even in by-the-glass selections.

Perfect pair: The perfect wine-and-food pairing is a synergy in which each component is made better by the other, like the Foie Gras du Monde, paired with a Moscatel Sherry.

Riot worthy: ‘One signature dish, the shrimp and tasso henican, is on almost every table we serve. Paired with an off-dry Riesling, this dish is truly explosive.’

Wine events: From a customized food-and-wine pairing dinner in our wine cellar room, to the flexibility to offering half-glasses from among 40 different wines by the glass, we allow each guest to have a different wine with every course.
