7-Layer Dip Is the Ultimate Party Appetizer

Heating the beans helps rid them of their canned flavor and facilitates spreading, even though the dip is served at room temperature. Be sure your tortilla chips are sturdy enough to stay intact through every layer. And if you want to skip a layer or even add a layer (minced bacon or sliced jalapeños, for example), it’s your party!


7-Layer Dip

Ingredients

½ cup minced scallions
¼ cup minced cilantro leaves
1 16-ounce can refried beans
1 ½ cups grated cheddar or jack cheese
2 cups prepared guacamole
1 ½ cups store-bought chunky tomato salsa, drained
1 ½ cups sour cream, whisked to loosen
½ cup sliced black olives Tortilla chips, for serving

Instructions

Mix scallions and cilantro in a small bowl and set aside. Heat beans in a small saucepan with 2 tablespoons water. Spread evenly on a rimmed plate or other shallow serving dish. Layer evenly (in this order) the cheese, guacamole, salsa, sour cream, olives and scallion-cilantro mixture. Serves 8 to 12.
