Bonal Sparkling Cocktail

The classic French 75 was Alvarez’s inspiration for this drink, which also includes Bonal for bitter and herbal notes to counter the elderflower.
“It’s really the perfect light, refreshing summer drink: a little sweet, bitter, sparkling and herbaceous,” says Alvarez.

Ingredients
  • ⅓ ounce Bonal Gentiane-Quina
  • ¼ ounce Aperol
  • ¼ ounce St-Germain
  • ¼ ounce simple syrup
  • ¼ ounce grapefruit juice
  • 4 ounces sparkling wine
Directions

Add Bonal, Aperol, St-Germain, simple syrup and grapefruit juice to a cocktail shaker, add ice and shake until chilled. Strain into a flute and top with sparkling wine. Garnish with a sprig of thyme.
